I’m wondering how to make a home theater with two 5s what would be the best way to do that? Then what soundbars are able to sink with both 5s if that is the only option.

Two Fives aren’t really designed to be used with a video set. The only way to ‘connect’ a TV/Projector/computer to them would be via the analog line in provided, which would incur a minimum of a 75 ms delay, making lipsync challenging, if not impossible.
They can be used as surround speakers, when bonded with a Sonos soundbar, which you can see by looking at the FAQs on each soundbar on the Sonos sales page.
The soundbars, and the Sonos Amp (for use with third party speakers) all have a digital input, either optical for the Ray, or ARC/eARC for the Beam, Arc, and Arc Ultra. All of these device’s digital line in doesn’t require the same delay.
For what it is worth, Sonos doesn’t make a 5, they have, in the past, made a PLAY:5, they currently make and sell a Five. There are distinct differences to each, albeit somewhat minor.
